According to the Protevangelium, St. Joseph had been chosen to be Mary's spouse when a dove alighted on a rod he was holding. Here he holds the rod as the ceremony takes place. The priest, dressed as a medieval bishop, joins the right hands of the couple. Joseph's hand also seems to be positioned to put a ring on Mary's finger. Both the ring and the joining of right hands come from ancient Roman tradition, not Judaism.
